Easy No Knead Bread

 

Ingredients:

3 cups all purpose white flour
1 cup soft whole wheat flour
¼ teaspoon active dry yeast
1 ½ teaspoon table salt
2 cups cold water 

Directions:

Place white flour, soft whole wheat flour, yeast and salt into a large mixing bowl and mix with a whisk. Pour in cold water and mix with a wooden spoon or spatula, or your hands, until the dough comes together (it will be very sticky); approximately 2 minutes. Cover with foil. Allow dough to rise at room temperature for 18 hours.

At this point, the dough will be very bubby. Deflate it with a spatula and scrape down the sides of the bowl. Fold the dough over itself, turning the bowl as you go around in a circular motion, about 10 times.

Scrape the dough onto a well-floured surface with a spatula. Sprinkle the surface of dough and your hands with flour. Roll and fold dough until you've formed a round or oval loaf shape that has a smooth surface; 1-2 minutes. If the dough is very sticky, just add more flour and shape the dough until it has a smooth surface.

Transfer to a cookie sheet lined with parchment paper and leave it uncovered to rise for about 2 hours where it should almost double in size.

In the meantime, preheat oven to 450 degrees F (230 degrees C).

With a sharp knife, make a slash down the middle of the dough (optional). Bake in the centre of the oven for 25-30 minutes. Remove and place on a rack and allow to cool.
