Chili

Ingredients:
2 lbs ground beef (or beef
and pork)
1 tablespoon extra virgin olive oil
1 ounce Canadian Club Whiskey or Tequila
1 tablespoon salt
1 tablespoon bbq sauce
2 bay leaves
2 garlic cloves, crushed
1 medium onion, chopped
1 large green pepper, chopped and seeded
1 jar or can tomato puree or strained tomatoes (23 oz)
1 can tomato paste (5.5 oz)
1 can kidney beans, drained & rinsed (20 oz)
Shredded Cheddar & Sour Cream
½ teaspoon each: dried oregano, dried basil, paprika, smoked paprika,
garlic powder, onion powder, cumin, coriander, chili powder, cayenne
powder, freshly ground black pepper
Directions:
Place the ground beef in a large pot.
Cook over medium heat until well
browned.
Drain off excess fat, add 1 ounce of Canadian Club Whiskey and
cook for 2 minutes.
Add the olive oil, onions, green peppers, garlic and
continue sautéing for 5 minutes.
Add the tomato sauce, tomato paste,
bbq sauce, 1 cup water and all the spices, bay leaves and salt. Stir
together well, cover, and then reduce the heat to low.
Simmer for 1
hour, stirring occasionally.
If the mixture becomes overly dry, add 1/2
cup water at a time as needed.
Add the kidney beans and continue to cook
on low for 30 minutes.
Taste and add salt and seasonings as required.
Top with cheddar cheese and sour cream.
