Tri Colour Bell Pepper Bisque

 

 

Ingredients:

3 bell peppers (red/yellow/green), sliced and seeded
1 small onion, diced
1 medium tomato, quartered and seeded
1 tablespoon olive oil
¼ cup white wine
2 tablespoons cooked rice (I like to use 3 tablespoons of cooked Jasmine rice)
(you can use raw rice, just ensure after simmering the bisque for 20 minutes that the rice is cooked through)
3 cups reduced sodium chicken broth 
1 teaspoon chicken bouillon 
¼ teaspoon paprika
Salt and pepper to taste

Directions:

Sauté peppers and onions in olive oil until tender. 
Add tomatoes and raw rice and cook over med-high heat for 5 minutes.
Add wine and stir for a few minutes;
Add tomatoes, chicken stock and chicken bouillon.
Simmer for 20 minutes. 
If using cooked rice, add now and stir.
Remove from heat and cool slightly.
