Spinach Noodles & Pesto Sauce

Serves 8
Ingredients:
1 1/2 cups baby spinach leaves
3/4 cup fresh basil leaves
1/2 cup toasted pine nuts
1/2 cup grated fresh Parmesan cheese
1 clove garlic (medium, minced)
1/2 cup extra virgin olive oil
1/2 teaspoon salt (or fine sea salt, to taste)
1/2 teaspoon freshly ground pepper
1/2 teaspoon lemon zest
1 tablespoon fresh lemon juice
1 pound linguine (or spaghetti or capellini)
Directions:
1. Wash the spinach and basil and chop the leaves coarsely.
2. Blend all the ingredients, except the pasta, in a food processor until smooth.
3. Taste and adjust seasonings and set aside.
4. Cook the pasta in boiling, salted water according to package directions.
Drain and reserve ½ cup of the cooking water.
5. Toss the hot drained pasta with half of the spinach basil pesto mixture along with a
tablespoon or two of the cooking water to moisten. Toss some more and add more
of the pesto with small amounts of water (as needed), a little at a time, until the pasta
is well coated.
6. Top with Parmesan cheese and serve.
