Spicy BBQ Shrimp

 

Prep: 5 minutes
Yield: 4 servings
Level: Easy

Ingredients:

1 lb shrimp
¼ cup white rum
1 tbsp brown sugar
1 tbsp chopped ginger or ¼ tsp ground ginger
2 tbsp chopped cilantro
1 tbsp vegetable or olive oil
1 clove chopped garlic or ¼ tsp ground garlic
1 tbsp grated lime zest
1 tbsp lime juice
1 tbsp Sriracha sauce or your favourite hot sauce
Bamboo skewers


Directions:

1. Combine all ingredients, except shrimp, in a bowl and stir.
2. Add shrimp, cover and marinate for 1-2 hours in the fridge.
3. Soak skewers in warm water for 20 minutes.
4. Thread the shrimp onto soaked skewers, making sure both ends of each shrimp is skewered.
5. Grill over high heat for 3 minutes per side or until shrimp is cooked through.
