Herbed Roast Turkey Breast

Ingredients:

1 bone-in turkey breast (about 6 lbs)
2 tbsp olive oil
1 tsp fresh cracked pepper
1 tsp salt
1 tsp dried rosemary, crushed
1 tsp dried thyme
˝ tsp garlic powder
˝ tsp onion powder
1 bay leaf
1 each; celery rib cut in half | onion, sliced | carrot cut in thirds
˝ cup white wine
˝ cup chicken stock
˝ lemon


Directions:

1. Preheat oven to 325 degrees F.
2. Pat the skin of the turkey breast dry with paper towel. 
3. Loosen skin and brush 1 tbsp olive oil under skin. 
4. Rub outside of turkey with 1 tbsp olive oil. 
5. Combine the pepper, salt, rosemary, thyme, garlic powder, onion powder 
    and rub over turkey.
6. Place vegetables in a large baking dish. Add wine, chicken stock and bay leaf. 
    then place turkey breast on top.
7. Bake, uncovered for 2 to 2 ˝ hours or until thermometer reads 170 degrees F. 
    If the turkey browns too quickly, cover loosely with foil.
8. Remove from oven and let stand for 15-20 minutes before slicing the breast 
    crosswise into slices. 
    Lay out on platter and squeeze lemon juice over it.
9. If preferred, you can make gravy from the pan drippings, strain the liquid into a 
     small pot over medium heat, add flour and stir until desired consistency is reached.
