Mediterranean Pork Ribs

Ingredients:

3 lbs pork side ribs
4 tbsp dried oregano
4 tbsp dried basil
1 tsp fresh ground pepper
1 tsp salt
4 garlic cloves – sliced or chopped
3 cups dry white wine
˝ cup olive oil
1 lemon, quartered

Directions:

1. Remove skin membrane from ribs with a sharp knife. This can make your ribs chewy if left on.
2. Cut ribs into individual pieces.
3. Combine all ingredients in a bowl, except oil and lemon, and mix well. 
4. Place ribs meat side down along with marinade in a large lasagna pan, cover and refrigerate overnight.
5. Preheat oven to 350 degrees F. Place covered pan in oven and bake for 1 hour.
6. Remove ribs and place on a cookie sheet. 
7. Preheat BBQ to 400 degrees F. Brush each rib with olive oil and add salt. BBQ until ribs have a nice sear. 
8. Remove from BBQ, squeeze lemon juice over ribs and enjoy!
