Flank Steak Fajitas


Prep: 20 minutes
(*2-12 hour marinate time)
Yield: 6 to 8 servings
Level: Easy

Ingredients:

1 lb flank steak
½ cup olive oil
1/3 cup soy sauce
¼ cup lime juice
½ tsp cumin
1 tsp garlic powder
½ tsp onion powder
3 tbsp brown sugar
1 large Spanish onion, sliced
1 each; red, green and yellow bell peppers, sliced
6-8, nine inch flour tortillas
Sour Cream
Guacamole

Directions:

1. Place steak in a large plastic zip lock bag set in a shallow dish.
2. In a small bowl, combine oil, soy sauce, lime juice, cumin, garlic and onion powder,    brown sugar and pour over steak. Seal bag and turn to coat.
Refrigerate for 2-12 hours. (the longer, the better)
3. Remove steak from marinade, and discard marinade. You can either broil or bbq the steak.
   a. Broil: Place steak on a broiler pan rack and broil 5 inches aware from heat for 15 to 20 minutes or to desired doneness, turning once. Remove and let stand covered for 10 minutes.
   b. BBQ: Place steak on a preheated 350 degree F grill. Grill for 15 to 20 minutes or to desired doneness, turning once. Remove and let stand covered for 10 minutes.
4. Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add onions and peppers and cook for 1-2 minutes. Set aside.
5. Cut steak diagonally across the grain into thin strips. Serve in tortillas with onions and peppers, sour cream and guacamole.
