Cream of Mushroom Soup
Total Time: 45 minutes
Prep: 5 minutes
Yield: 6 to 8 servings
Level: Easy
Ingredients:
1 pound fresh mushrooms, sliced (mixed mushrooms will add extra flavour)
1 small white onion, sliced
½ cup butter
2 cups chicken stock
1 cup white wine
½ teaspoon salt (adjust salt to suit your taste)
¼ teaspoon white pepper
½ teaspoon dried thyme
1 cup 35% heavy whipping cream
Directions:
In a large skillet, add butter and cook the mushrooms until well browned over medium to high heat.
Add onions and saute until onions are soft.
Add wine and continue cooking for 2 minutes.
Add chicken stock, salt, pepper, thyme and continue cooking over moderate heat,
stirring frequently until soup has reduced by half and slightly thickened (20 minutes).
Puree soup in a blender, a portion at a time.
Return soup to pot and allow to come to a simmer.
Stir in cream, simmer for a few minutes until soup thickens.
Adjust seasoning if required and serve.
