Broccoli, Carrot & Cheddar Soup



Total Time: 35 minutes
Prep: 5 minutes
Yield:6 to 8 servings
Level:Easy

Ingredients:

1/3 cup butter
1 small yellow onion, chopped
2 cloves garlic, minced
1/3 cup all purpose flour
2 cups chicken stock (low sodium)
2 cups milk
˝ tsp salt (to suit your taste)
˝ tsp crack black pepper
1 tsp chicken stock bouillon
1 tsp mustard powder
1 tsp garlic powder
2 cups broccoli florets, cut into small pieces
2 carrots, peeled and grated
2 cups old cheddar cheese, grated

Directions:

Melt butter in a large pot over medium heat.
Add the onion, stir until fragrant.
Add the garlic and stir for 10 seconds.
Whisk in the flour and stir for a few minutes, until slightly golden.
Reduce heat to medium-low and slowly pour in the chicken stock and milk.
Stir well to combine until the flour is dissolved into the liquid.
Add salt, pepper, chicken bouillon, mustard powder and garlic powder.
Mix well and cook for 5 minutes until thickened, stirring occasionally.
Add the broccoli and carrots and simmer for 20 minutes or until broccoli is tender.
Mix in cheese and stir until combined.
Serve with crusty rolls!
